Ground Pork Chinese Cold Noodles (猪肉沫凉拌面)

 


Ingredients:

  • 16 oz Chinese Yellow Noodles
  • 1lb Ground Pork
  • 1 Small-Sized Carrot
  • 4 Tbsp Bean Sprouts
  • 2 Eggs
  • 1 Cucumber
  • 4 Stalks of Green Onion
Seasonings for Ground Pork
  • 1 Tbsp Shoaxing Wine
  • 4 Tbsp Light Soy Sauce
  • 1 Tbsp Dark Soy Sauce
  • 1/2 tsp White Pepper Powder
  • 1 Tbsp Dark Soy Sauce
  • 1 tsp Salt
  • 1/2 tsp Five Spice Powder
  • 1/4 tsp White Pepper powder
  • 1/8 tsp Five spice powder
  • 1/4 Cup Olive or Peanut Oil
Chili Sauce
  • 1/4 Cup Chili Oil
  • 1/4 Cup Light Soy Sauce
  • 2 Tbsp Sesame Paste
  • 1 Tbsp Peanut Butter Paste
  • 1 tsp Szechuan Peppercorn Powder
  • 1/2 tsp Five Spice Powder
  • 1 tsp Sugar
  • 1 Tbsp Oyster Sauce
  • 6 Cloves Garlic, Minced
  • 1 Stalk Green Onion, Minced

Preparation:
1. In a sauce pan, add the water and boil the noodles. When it is al dente, drain the hot water.  Rinse the noodles with the cold water and add some drops of olive oil.  Set aside.
2. In a small bowl, season the ground pork with all provided seasonings and marinate it for at least 15-20 minutes.
3.  Julianne the carrot, cucumber, 2 stalks of green onion and set them aside on the plate or a small tray.
4. Boil the bean sprouts in a small sauce pan for about 2-3 minutes. Drain the water and transfer it to the same plate where the shredded carrot and cucumbers are.
5. Mince the other 2 stalks of green onion. Transfer it to the plate as well.  
6. Scramble one egg with a tiny bit of salt at a time in a small bowl.  Grease the 12-inch frying pan with 1 tsp of cooking oil on the medium heat.  Spread the scrambled egg to fill the entire frying pan.  Gently flip over to cook both side. Transfer it to the plate, let cool and cut it into 0.5 cm strips. Repeat the same for the second egg.  Then, transfer the shredded scrambled egg to the plate together with other veggies.  
7.  In a frying pan on the medium heat, add about 3 Tbsp of cooking oil.  Add the ground pork and cook them.  Turn the heat to low immediately adding the ground pork.  Stir fry them until it is cooked.
8. To make the chili sauce, in a small bowl, first mix the sesame paste and the peanut butter paste thoroughly.  Add a tiny bit of oil as needed to mix them well.  It will get the thick consistency texture of the paste. 
9. In a frying pan on the medium heat, add the chili oil first.  Then, minced garlic and green onion and stir fry them for a minute or two.  Add the remaining ingredients including the paste combined at step#6. Stir them well until the bubbles form.  Remove from the stove and let cool the sauce.
 

Putting Everything Together:
1.  In a bowl, add the desired amount of noodle.  Add each kind of shredded veggies and scrambled egg as well as the ground pork.  Add the chili sauce.  Mix everything together and ready to serve.
