Oxtail Soup (牛尾汤)

  


Ingredients:


  • 2 1/2-3lb Oxtail (1 package from Costco
  • 3 tsp salt
  • 16 cup Water
  • 4 cloves of garlic
  • 1-1 1/2 lb of Daikon
  • 3 stalks of green onion
  • white pepper powder to sprinkle

Preparation:

  1. In a bowl, soak Oxtail in the water for at least 15 minutes
  2. Wash them thoroughly and drain and discard the water
  3. In a  5Qt pot, transfer the oxtail pieces.  Add the cold water just enough to cover them
  4. Boil them on medium high heat for about 12-15 minutes
  5. Discard the soup and wash oxtail thoroughly under the cold running water.
  6. Mince the garlic cloves
  7. Peel daikon and cut them to about 2-inch length piece. Halve them.

Putting Everything Together:
  1. In a 5Qt pot, add the oxtail pieces, daikon, minced garlic and 16 cup of water.
  2. Boil them on medium high heat without the lid.  When the water starts really boiling, turn the heat to low.  Add salt, cover the lid and let it simmer for another 2 hours.  It is important not to exceed 2 hours.  After 2 hours, the meat will start falling off from the bones.
  3. After 2 hours, turn the heat off.  Let it cool a bit.  Skim the fat off the soup.  Alternatively, refrigerate the soup overnight and skim the fat off the soup.  
  4. Mince the green onion and put the desired amount to the serving soup bowl.  Carefully take the daikon out of the soup, slice them and put the desired amount to the serving soup bowl as well.  Add the soup to the bowl, sprinkle it with a little bit of the white pepper (optional) and enjoy.
