Baked Lamb Ribs(烤羊排)

 



Ingredients:


  • 1 1/2 lb Lamb Ribs
For Marinade:
  • 1 tsp Salt to taste
  • 2 tsp Cumin powder
  • 1 tsp garlic powder
  • 1 tsp Chili powder
  • 1 1/2 tsp steak seasoning or unsalted BBQ seasoning
  • Olive oil spray
Preparation:
  1. Wash the lamb ribs thoroughly.  
  2. Flip the lamb ribs over.  Peel the fascia off and remove them.  This is an important step.  Otherwise, it will prevent the marinade dissolve into the meat.
  3. Wash the ribs again.  Pat it dry thoroughly with the kitchen tower on both sides. 
  4. Again flip the lamb ribs again facing the bottom side upward.  Cut about 1/2 inch to 3/4 inch between each rib bones.  Also, make a small cut near the top middle section where the rib bone connects to the meat.
  5. Sprinkle the salt on both sides and rub it into the meat.
  6. Sprinkle the cumin powder, chili powder, garlic powder and rub them thoroughly.  
  7. Spray both sides with the olive oil spray. This will keep the meat glossy.
  8. Line the baking tray with aluminum foil.  Put them in the baking tray and refrigerate it overnight.
Putting Everything Together:
  1. Preheat oven to 425F degree
  2. Bake the lamb rack for 20-25 minutes, depending on the size of the lamb rack.  Turn it half way through
  3. Broil it for another 10 minutes.  Keep an eye during the broiling to make sure it is not burnt.  Cover it with aluminum foil if needed.  Add additional broiling time by 5 minutes as needed.
  4. Transfer it to the cooling rack.  Cut the lamb racks and serve.
