Ingredients:
- 1 1/2 lb Pork Ribs
- 1 1/2 Cloves of Garlic
- 1 Tbsp Minced Onion
- 2 Stalks of Green Onion
For Marinade:
- 1/2 tsp Salt
- 2 Tbsp Light Soy Sauce
- 1 tsp sugar
- 1 tsp Sweet Soy Sauce
- 2 tsp Oyster Sauce
- 2 1/2 Tsp Minced Garlic
Preparation:
- Chop pork ribs into small pieces, each piece is about 1.5 inch long or your desired sized pieces. Don't cut them too big since it'll take longer to get cooked inside during the deep frying.
- Wash the pork ribs thoroughly. In a large bowl, rub them with salt and let it marinade for about 10 minutes.
- Meanwhile, mince the garlic, onion and green onion.
- Add the remaining marinade ingredients to the pork ribs, including the minced garlic. Cover it with the plastic wrap and refrigerate for 30 minutes.
Putting Everything Together:
- In a deep frying pan on medium high heat, add oil. When the oil is about 60% hot, turn the heat into medium low heat. To test the readiness of the oil, put the wooden chopstick into the oil. If the oild bubbling around the chopstick, it's ready.
- Add the pork ribs into the oild and fry them for about 8 minutes. Remove them from the frying pan, drain the excessive oil and transfer them to the plate that is lined with the paper towel.Repeat the second batch if you need to.
- Once all batches are done frying, turn the heat to high. Transfer all the fried pork ribs to the frying pan and fry for 30 seconds. This is to burn the extra fat and make them more cripsy. Again, drain the excessive oil and transfer them back to the plate is lined with the paper towel.
- In a frying pan, add 1 tsp of cookig oil. Add the remaining minced garlic and stir fry on a medium low heat. After 30 seconds, add minced onion and continue to fry them altogether until the minced gralic starts to change color. Add minced green onion and stir fry them about another 30 seconds. Finally add the fried pork ribs to the frying pan and briefly stir fry them altogether for another 30 seconds.
- Immediately transfer to the serving plate and it is ready to serve.
