Chinese Plain Milk Buns (馒头)





Ingredients:


Dough:

  • 3 cup All-Purpose Flour
  • 1/2 cup Milk
  • 1/4 cup Granulated Sugar
  • 5 Tbsp Veggie or Olive Oil
  • 1/4 cup Water
  • 1 1/2 tsp Active Dry Yeast
  • Pinch of Salt
Preparation:
1. In a small bowl, add water.  Microwave it for about 15-20 seconds.  Add yeast and let it bloom for 3-5 minutes until the foam is formed.
2.  In a large mixing bowl, add flour, sugar, salt and stir them well with the whisk or spatula.
3.  After 3-5 minutes, stir the yeast mixture well with the spoon. Pour it into the dry ingredients at the step#2. Pour milk and oil into the mixture as well.
4. Use spatula to combine them well.
5. Use the hand to combine everything together until you do not see the dry ingredients in the dough.
6. Cover the bowl with the lid and let it sit at a warm place for about 20 minutes.
7.  After 20 minutes, Knead the dough for about 3-5 minutes until the smooth surface is formed.
8. Cover it with the lid again and let it sit for another an hour or two until the dough size is doubled.
9. When the dough is doubled, remove the lid and deflate the gas completely out of the dough.
10. Use the rolling pin and flatten the dough in rectangular shape.  It should be about 1x1.5 foot (widthxlength) long.  The dough thickness should be about 0.25 inch.
11. Roll up the dough.  Cut it into about 12 equal pieces.
12. Cut the wax paper and line the bottom of each dough pieces.

Putting Everything Together:
1.  Add water to the steamer.
2.  Transfer the dough pieces (with wax paper) to the steamer.  Cover it with the lid and let them proof for another 25 to 30 minutes.
3. After 25-30 minutes, the dough should rise in nearly doubled. Turn the heat to high on stove top.  Let it steam for about 20-25 minutes.
4. Put the fire off.  Let it sit for another 5 minutes on the steamer.  Do not remove the lid.
5. After 5 minutes, transfer the milk buns to the plate and they are ready to serve!
