Ingredients:
250g of Spaghetti (Half a packet)
10-12 Shrimp (Shelled and Deveined)
10 Whole Chinese Dried Chili Peppers
1 Cup Dry Roasted Peanuts (Skinless)
1 Red Bell Pepper
4 Garlic cloves
1/2 Yellow Onion
2 Stalks of Green Onions
1/4 cup Olive Oil + 1 tsp (for spaghetti) + 2 tsp (for cooking shrimps)
Seasonings:
1/2 Cup Chicken Stock
1/4 Cup Light Soy Sauce
1 tsp Sugar
2 tsp Shoa Xing Wine
2 tsp Corn Starch or Tapioca Starch
1 tsp Oyster Sauce
1/2 tsp chicken boullion
Salt and Pepper To Taste
Preparation:
1. In a small bowl, mix all seasonings except chicken stock, salt and pepper. Set aside
2. Shell and devein shrimp
3. Mince garlic cloves and yellow onion (Use a chopper or grinder if you have one)
4. Halve green onion stalks into two separate white and green parts. Cut the stalks into 1.5 inch strips. For the white part, cut into 4 quarter sections and then further cut them into long strips.
5. Dice red bell pepper into 1/2 inch pieces
Cooking:
Shrimps-
1. Heat the wok, pour 2 tsp of olive oil. Add 1 clove of minced garlic and stir-fry for about 30 seconds on a low heat. Add shrimps and cook them 85% done. Make sure that they are not fully cooked since they will be cooked again with spaghetti, to avoid over cooking. Set aside.
Spaghetti -
2. In a pan, boil the water, add 1 tsp salt and cook spaghetti andante. Drain and sprinkle with 1 tsp of Olive oil. Set aside.
Putting Everything Together -
3. While cooking spaghetti, heat the wok up and pour 1/4 cup of olive oil.
- Add whole dried chill peppers and stir-fry them for briefly until aroma. Make sure not to get them burnt. Take them out and set aside
- Add remaining minced garlic and minced yellow onion and stir fry them for about 30 seconds.
- Pour in the mixed seasoning that was prepared in the small bowl earlier.
- Add the cooked spaghetti immediately
- Pour the chicken stock. Cover the lid and cook for a few minutes until most of the soup is evaporated
- Add diced bell peppers and cook for 1-2 minutes
- Add Shrimp and mix everything well
- Add Peanut and whole dry chili peppers
- Add salt and pepper to taste
- Finally add the chopped green onions
- Transfer to plate and ready to serve
