Burmese Pancake (Bain Mont)


Ingredients:

  • 2 cup pancake mix
  • 2 Tsp glutinous rice flour or sweet flour
  • 1/2 cup brown sugar + 1 Tsp of brown sugar
  • 11/2 cup water
  • 3 Tsp sweetened coconut flakes
  • 1/4 cup toasted coconut chips
  • 3 tsp poppy seeds (white or black; white is preferred)
  • 3 Tsp of sweet cream butter (can be replaced with unsalted or salted butter as well) + 1 Tsp of butter


Preparation:
1. In a big glass bowl, mix all ingredients except coconut flakes, coconut chips and poppy seeds.
2. Broil the oven in high heat
3. Line non-stick baking tray with aluminum foil

Putting Everything Together:
1. On a **pancake griddle, put 1Tsp of sweet cream butter.  Pour about 3/4 cup of batter with 400F degree temperature.  Sprinkle coconut chips, coconut flakes and poppy seeds on the pancake.  After cooking for a minute, lower the temperature to 350F degree.  Cook for about 3-4 minutes.  2 pancakes could be cooked concurrently.
2. Transfer them to the baking tray.
3. Broil them for about 5 minutes.  Keep an eye not to get the coconut burnt.
4. While broiling, cook the remaining batter for two more pancakes on the pancake griddle.  Repeat step#3.
5. For presentation, melt 1Tsp of brown sugar and 1Tsp of butter on the pancake griddle.  Mix them and glaze the pancake surface with the butter by brushing it.
6. Cut each pancake into 4 slices and serve hot.  Recipe makes 4 pancakes.

**If you don't have the pancake griddle, a frying pan can be used.
